For this brew, the brewers used wet hop Spalter Select hops from a farm in Germany. The process will be open fermented, horizontally lagered, naturally carbonated and polish filtered. Templin Family Brewing and Prost both specialize in traditional brewing and this was an excellent opportunity to showcase that shared love for a ✨clean complex lager bier✨

For this years collab, the beer we kept coming back to was a West Coast Kolsch with Surfer Boy Pizza vibes, so here we are, with a splash of New Zealand hops complimenting two traditional European varietals.

We decided to revisit a project we had done for Collab Fest back in 2019 where we cut down a live pine tree and used it in the brewing process. We run hot wort from the kettle down a channel of a 12' section of the trunk during the boil to pull in the character of the tree. It will be a citrusy Norwegian Farmhouse/Saison as we are blending a Kveik strain with French Saison Yeast

Playing off what the two of us have been most excited about in IPA, Thiols (responsible for the characteristic tropical fruit notes, such as grapefruit, passion fruit, and guava, that are often associated with hop-forward beers, particularly those with New Zealand hops) and Wood Spires in clean beers.

Our long time friend and Director of Production/Co-Founder/Co-Owner of Brewery Novalis in NY came out to select specific barrels for this collaboration. We chose to blend puncheons of extra mature spon from batches that utilized high hopping rates and extra long marathon boils (>12hrs boil time) to match caramelization flavors of burnt honey, toasted orange
peel, and toffee, to meld with finishing cask notes reminiscent of bright and lively candied lemon, spicy black tea, and undertones of cedar and smoke. When you bring fellow blenders of SponSponBingBong together, magical mixtures emerge, as arbitrary boundaries are just a Human Construct!

Milds aren't very common in the industry, let alone a smoked versions - and that sounded cool. The beer should be malt forward, crisp and drinkable with a light, pleasant smoked finish.
